雪蓮子這名稱不是太常聽見,它又叫做埃及豆、回回豆、雞豆,但當屬「雞豆」最為傳神。因為每顆雪蓮子有小小尖端,看起來像尖雞喙一樣逗趣。咀嚼起來則鬆軟飽滿,有著土豆的口感。您可能會問「為什麼不用土豆就好?」因為土豆是某些消費者的過敏原,假如因為這樣嚐不到軟嫩的麵筋,豈不很可惜。因此青葉以營養豐富的雪蓮子--「雞豆」來取代「土豆」。

自然滷製就能很甘甜

Chickpeas ("Chicken Beans") Replace Peanuts in Seitan Gluten

The name "Snow Lotus Seed" is not commonly heard; it is also known as Egyptian bean, Hui-Hui bean, or chickpea, but the name "Chicken Bean" is the most apt description. This is because each chickpea has a small pointed tip, making it look comically like a chicken's beak. When chewed, it is soft and full, with a texture similar to peanuts (tudou in Chinese, which can refer to peanuts or potatoes depending on context). You might ask, "Why not just use peanuts?" Because peanuts are a common allergen for some consumers, and it would be a shame for them to miss out on the tender seitan gluten. Therefore, Aoba uses the nutritious chickpea—the "Chicken Bean"—to replace the peanut.

Naturally Braised for Sweetness

Aoba, which, like Leezen, prioritizes natural health, does not want its seitan gluten to contain any chemically synthesized additives. The philosophy is: if they won't eat it themselves, why should they serve it to customers? Therefore, the Chickpea Seitan Gluten uses no chemical additives. Through natural braising (simmering in savory sauce), the sweet flavor is fully absorbed into the plump ingredients.
