GABA 茶又稱佳葉龍茶,為近幾年在台灣崛起的新興茶類,開發源自日本,1984 年由津志田博士研發,1994年由行政院農業委員會茶業改良場配員赴日本學習其關鍵技術。新鮮茶菁在經過厭氧發酵的處理中,會產生 γ-胺基丁酸 (GABA),此物質為大腦內重要神經傳導物質之一,主要功能為放鬆神經、調節壓力,現代人因工作及課業壓力大產生的不適症狀,可透由飲用 GABA 茶來舒緩,並且 GABA 可中和茶葉中咖啡因的刺激性,除了不影響睡眠還可讓人心情放鬆。
有趣的是初研發的 GABA 茶並不好喝,經厭氧處理產生的悶酸味,普遍接受度不高,經過多次的改良與實驗,現今的 GABA 茶不僅在風味口感上有大幅度的進步,金黃色的茶湯帶微微果酸及甜味,GABA 成分也被完整地保留(每 100 克茶乾含有 150 毫克以上的 γ-胺基丁酸 (GABA))。

簡單來說,每一塊田地申請轉作有機、經過驗證機構實地查驗,在取得正式的有機驗證前,須經過三年的有機轉型期,期間產出的農產品皆可以有機轉型期的身份標示上架販售。
有些人可能會擔心,轉型期產品是不是不比有機期產品那麼安心?
答案是:有機轉型期農作物的安心程度,等同於有機農作物!
依有機法規,轉型期過程除了栽種方式同樣不可使用農藥、除草劑、化學肥料,檢驗標準也比照有機農產品,殘留檢驗未檢出農藥及有毒物質才能上架販售。

Recommended for Relaxing at Night: GABA Tea (Jia Ye Long Tea)
GABA tea, also known as Jia Ye Long Tea, is a relatively new tea category that has emerged in Taiwan in recent years. Developed in Japan, it was first developed by Dr. Tsushida in 1984, and in 1994, staff from the Tea Research and Extension Station of the Council of Agriculture, Executive Yuan, went to Japan to learn its key techniques. During the anaerobic fermentation process, fresh tea leaves produce gamma-aminobutyric acid (GABA), an important neurotransmitter in the brain. Its main functions are to relax nerves and regulate stress. The discomfort caused by work and study pressure in modern life can be relieved by drinking GABA tea. Furthermore, GABA can neutralize the stimulating effects of caffeine in tea, so it doesn't affect sleep and can also promote relaxation.
Interestingly, the initial GABA tea wasn't very palatable. The anaerobic processing resulted in a musty, sour taste that was generally unpopular. After numerous improvements and experiments, today's GABA tea has seen significant improvements in flavor and taste. The golden tea has a slightly fruity acidity and sweetness, and the GABA component is fully preserved (each 100 grams of dried tea contains more than 150 milligrams of gamma-aminobutyric acid (GABA)).

Brewing Method
Tea/Water: Spread a single layer of tea leaves evenly at the bottom of the brewing vessel.
Brewing Water Temperature: Boil water above 90°C.
Brewing Time: The steeping times for the 1st/2nd/3rd/4th infusions are 60/40/50/50 seconds respectively. Adjust the time according to your personal preference for strength.
