Carefully selected lotus roots from pesticide-free cultivation in Baihe, Tainan, and handcrafted, this 100% pure lotus root powder contains absolutely no added starches.
Lotus root is the underground rhizome of the lotus plant, large in size and containing starch, protein, and fiber.
The lotus roots, harvested from the field, undergo a series of processes including soaking and washing, peeling, grinding, powdering, washing (Note 1), sedimentation, scraping (Note 2), sun-drying (Note 2), and packaging. This process takes at least a week and results in limited production. The coarse starch product is produced entirely by hand using a slow and meticulous process.
Lotus root powder has numerous uses and is a highly nutritious tonic. Besides being brewed, cooked, or enjoyed chilled, it's equally beneficial.
Note 1: The powder washing process is entirely manual and cannot be replaced by machinery.
A farmer takes an appropriate amount of lotus root powder, wraps it in gauze, places it on a sieve, and rubs it while rinsing it with water.
This allows the milky-white lotus root milk to flow into a large bathtub or water tank. What remains in the gauze is, of course, useless residue (coarse fiber).
The milk must be allowed to settle repeatedly. After settling, the clear water on top is removed, water is added again, and the process is repeated until a pure, white lotus root milk is obtained.
Note 2: Filtering and sun-drying are also essential processes. The highly concentrated and white lotus root milk, which cannot be replaced by machinery, is poured into a large porcelain bowl, covered with a thick layer of gauze, and topped with charcoal ash to absorb moisture.
This action is similar to making "rice noodle cakes" during the Lunar New Year.
After the rice flour paste turns into rice noodles, a grater is used to carefully shave the noodles into thin sheets, which are then placed in a large bamboo tray to be sun-dried into lotus root starch.

Instructions for Use:
1. After the water boils, turn off the heat. Sprinkle spoonfuls of lotus root starch thinly and evenly into the boiling water (95˚C~100˚C).
The consistency is up to you (if it's too thick, it will solidify into a pudding-like consistency the next day, smooth and delicious). It's cooked when it settles.
Afterwards, you can add honey, brown sugar, maple syrup, rock sugar, etc., to taste. Enjoy it hot in winter and cold in summer.
Note: Because lotus root starch contains starch, do not add too much at once to avoid clumping while the center remains uncooked. 2. Thickening Foods: Lotus root powder can be used as a thickening agent, often replacing cornstarch for thickening food sauces.
