蔬菜拉麵以蒸煮取代傳統油炸的方式,讓麵條減少油膩感。蔬菜包更含有胡蘿蔔、海帶芽、玉米、青豆仁多種乾燥蔬菜,煮湯、乾拌皆宜,只要將水煮開後放入拉麵及蔬菜包煮三到五分鐘,再將調味料放入湯中或乾拌即可享用美味。

承昌老闆娘陳美環因為先生罹患肝癌,因為美環的先生是愛麵一族,她希望研發一款先生能享用的健康又美味的素食麵,因此回鄉承接了公公的製麵事業,負責研發產品。2001年,里仁想為消費者推出非油炸的快煮麵,經過多方探詢,找到位於台中的承昌食品,沒想到美環表示她早就認識里仁了,原來美環的朋友曾送她里仁熱賣的胚芽餅,並大力推薦、告知熱賣難求的盛況。因此雙方見面倍感親切,加上理念相契合,很快地就展開合作。
吃的安心 就是最好的禮物
製作麵體上,美環捨棄了省時的油炸方法,用麵粉和上鹽水製成麵糰,經過滾輪碾壓,切割成條後,讓一個個麵糰送進機器裡蒸炊,再送風乾燥。調理包的處理當然也不能馬虎,美環細心的將各種薑絲、香菇、醬油、豆瓣醬爆香後,再與香辛料做拌炒,製成調理包。她還說:「蔬菜要多一點,才吃得滿足。」於是主動擴充蔬菜包份量,裏頭充實著胡蘿蔔、海帶芽、玉米、青豆仁。
「蒸煮炊乾」的創新方式,雖然製程多工費時,卻讓麵條吃起來減少油膩感。美環覺得,能讓吃麵的人嚐到安心美味的麵條,就是最好的禮物。

Healthy Vegetable Ramen Instead of Deep-Frying: Steaming Replaces Deep-Frying
This vegetable ramen uses steaming instead of deep-frying, reducing the greasiness of the noodles. The vegetable packet contains various dried vegetables such as carrots, seaweed sprouts, corn, and green peas, suitable for both soups and dry dishes. Simply boil water, add the ramen and vegetable packet, cook for three to five minutes, then add seasonings to the soup or dry-mix and enjoy.
Non-Fried Healthy and Delicious Quick-Cook Ramen: Chen Meihuan, the owner of Cheng Chang, wanted to develop a healthy and delicious vegetarian noodle dish for her husband, who is a noodle enthusiast, after he was diagnosed with liver cancer. She returned to her hometown to take over her father-in-law's noodle business and was responsible for product development. In 2001, Leezen Company wanted to launch non-fried quick-cooking noodles. After searching extensively, they found Cheng Chang Foods in Taichung. Unexpectedly, Meihuan said she already knew Leezen Company; a friend had given her Leezen Company's best-selling germ cakes and strongly recommended them, mentioning their high demand and scarcity. Therefore, both parties felt a strong connection upon meeting, and given their shared values, they quickly began collaborating.
Eating with Peace of Mind is the Best Gift
In making the noodles, Mei-huan abandoned the time-saving frying method. She used flour and salt water to make dough, which was then rolled out, cut into strips, and fed into a machine for steaming before being air-dried. The preparation of the seasoning packets was equally meticulous. Mei-huan carefully sautéed various ginger slices, mushrooms, soy sauce, and fermented bean paste, then mixed them with spices to create the seasoning packets. She added, "More vegetables are needed for a satisfying meal," so she proactively increased the portion size of the vegetable packets, filling them with carrots, seaweed sprouts, corn, and green peas.
This innovative "steaming, boiling, and drying" method, although more labor-intensive and time-consuming, reduces the greasiness of the noodles. Mei-huan believes that providing noodles that people can enjoy with peace of mind and delicious taste is the best gift.
