One tree, nothing added

White pine is one of the great trees of northeastern North America, and its needles have been steeped as a tea there for generations, by Indigenous peoples long before anyone else. This pouch holds only those needles: Pinus strobus, wild-harvested in Wisconsin and dried on the small farm that gathers them.

It is a cup that asks for a little patience. Boil the water, cover it, steep for fifteen minutes, and let the kitchen smell like a forest for a while.

Tasting notes
Clean and woodsy, with a green, resinous pine aroma and a faint citrus brightness. Pale gold in the cup.

How to brew

  1. Use 1 heaped tsp per 8 oz of freshly boiled water. The needles are light, so a generous spoon is normal.
  2. Steep 15 minutes, covered. Longer gives a deeper, more resinous cup.
  3. Add a little honey if you like it sweet.

Some evergreens that look similar, yew in particular, are toxic, so never substitute needles you have gathered yourself unless the tree has been identified with certainty.
