阿煥伯客家美食醃漬食品,擁有超過50年以上醃漬食品的製作經驗。從民國四十幾年起在苗栗公館地區,首先投入福菜的製造,是台灣最早將福菜加工企業化的廠商。
阿煥伯榨菜絲,符合里仁上架規範,在製程上無添加防腐劑,僅以天然食鹽及辣椒粉醃漬。經古法醃漬發酵與時間的化學反應,當芥菜莖熟成為榨菜的成品時,保留了榨菜的營養與口感‑‑鮮脆、有韌性。

古法保存蔬菜  醃漬發酵的美味
新鮮芥菜經採收後,留取瘤狀的莖部,以人工修掉易腐爛的莖葉邊,保留整球芥菜莖。先經過日光曝曬,再入桶中醃鹽,數日取出再曬。如此反覆三次後,去掉老皮,放入袋中用槓桿強力壓榨,去除鹹水。最後拌入辣椒粉,擺進罈中自然發酵數月,待有香氣溢出即成。

榨菜含有豐富的營養,經過數月發酵醃製的漬然味,能增加料理的層次風味。可以做成涼拌小菜,吃它的鮮香;與其他食材搭配炒食,它的鹹香脆感,增加菜餚豐富度。

Brand History

Ah-Huan Bo Hakka Delicacies Preserved Foods has over 50 years of experience in making preserved foods. Beginning in the late 1950s (around 1950-1959) in the Gongguan area of Miaoli, the company was the first to start manufacturing Fu Cai (preserved mustard greens), making them Taiwan's earliest manufacturer to commercialize the processing of Fu Cai.

Product Features

Ah-Huan Bo Shredded Preserved Mustard Stem (Zha Cai Si) complies with the strict standards for Shelflife products. In the manufacturing process, no preservatives are added. It is preserved only with natural salt and chili powder. Through the traditional pickling and fermentation process, and the chemical reaction that occurs over time, the final product retains the nutrition and texture of the preserved mustard stem—it is crisp, fresh, and chewy.

Traditional Preservation: The Delicacy of Pickling and Fermentation

After fresh leaf mustard is harvested, the bulbous stem is retained. The edges of the stem and leaves that are prone to spoilage are trimmed off manually, leaving the entire mustard stem intact.

  1. It is first subjected to sun exposure.

  2. It is then placed in a barrel and pickled with salt.

  3. After several days, it is taken out and dried in the sun again.

  4. This process is repeated three times.

  5. Next, the tough outer skin is removed, and the stems are placed in bags and heavily pressed using a lever to remove the brine.

  6. Finally, chili powder is mixed in, and the mixture is placed in jars to naturally ferment for several months until a fragrance emanates, indicating it is ready.

In Cooking: Zha Cai as the Star or the Best Sidekick

Preserved mustard stem (Zha Cai) is rich in nutrients. The unique fermented flavor developed over months of pickling adds depth and complexity to dishes. It can be made into a cold appetizer to be enjoyed for its fresh fragrance, or it can be stir-fried with other ingredients, where its salty, savory, and crisp texture enhances the richness of the dish.
