上安香菇教育農場位於濁水溪上游的陳友蘭溪畔,生產的有機香菇是以太空包培養、山泉水灌溉,配合玉山山脈日夜溫差大的特殊氣候,白天濕熱有助於香菇快速成長,晚間溫度急速下降有利於保留養分,讓香菇質地細嫩、香味與眾不同。
農場主人李藍柚先生以超過20年的香菇栽種經驗,用心栽培出味香質佳的有機香菇,更堅持香菇採收的當天便要完成分級,並以手工剪除香菇根部較硬的部分,保留細嫩傘形部份的整理、及烘乾,以完整保留香菇的養分與鮮美。

太空包是以木屑至於塑膠袋的方式生產香菇,是現今普遍的香菇栽培法。將柯、栗、櫟樹磨成的木屑,加入米糠、玉米粉、碳酸鈣及水攪拌,並經過製包機仿段木壓製成圓柱狀,之後再加上瓶口套及棉花,並移入蒸爐內以高溫蒸氣殺菌,殺菌完移出蒸爐、經自然冷卻後移入接菌室,接著植入香菇菌種於太空包內,最後將香菇包移入香菇寮,經過120至140天菌種成熟後割下袋口,即長出香菇。

A Unique Environment Cultivates Delicious Shiitake Mushrooms
The Shang-An Mushroom Educational Farm is situated on the banks of the Chenyoulan River, in the upper reaches of the Zhuoshui River. The organic shiitake mushrooms are cultivated using a 'space bag' method and mountain spring water irrigation. This, combined with the large day-night temperature differences unique to the Yushan Mountain Range, creates an ideal environment. The warm, humid daytime helps the mushrooms grow quickly, while the rapid drop in temperature at night helps retain nutrients, resulting in shiitake mushrooms with a tender texture and an exceptional fragrance.
Mr. Li Lan-You, the farm owner, utilizes over 20 years of experience in mushroom cultivation to thoughtfully grow fragrant and high-quality organic shiitake mushrooms. He insists on completing the grading process on the very same day they are harvested. He also manually trims the tougher stem ends, preserves the tender, umbrella-shaped part, and immediately initiates the drying process to fully lock in the mushroom's nutrients and fresh flavor.

These organic shiitake mushrooms are richly fragrant. Simply rinse them lightly and soak them in water before use. They are suitable for stir-fries (rice, noodles, vegetables) and soups, adding an extra layer of flavor to your dishes!

The 'space bag' method is the prevalent method for cultivating shiitake mushrooms today, involving the production of mushrooms in plastic bags filled with wood chips. Wood chips ground from trees like Lithocarpus, Castanea, and Quercus are mixed with rice bran, corn flour, calcium carbonate, and water. This mixture is then pressed into a cylindrical shape by a bagging machine, mimicking the structure of a wood log. A plastic sleeve and cotton plug are added, and the bags are sterilized using high-temperature steam in a sterilizer. After sterilization and natural cooling, the bags are moved to an inoculation room where the shiitake mushroom spawn is planted inside the space bags. Finally, the bags are moved to the mushroom shed. After 120 to 140 days when the spawn matures, the bag opening is cut, and the mushrooms begin to grow.
