為了開發少或無化學添加物的健康餅乾，里仁請福義軒刪掉配方中的人工色素、香料、品質改良劑、氫化油脂、氨粉與泡打粉。這讓福義軒的老闆曾華盈花了好多功夫說服做餅乾的老師傅，因為這些添加物，都是製作餅乾的必備品，更何況這些添加物都在政府核准的食品添加規範內。里仁看出曾老闆的擔憂，於是向他說明：「里仁追求的是健康的餅乾，並不想為了一時的口腹之慾，而去添加不必要的添加物。」曾老闆聽了之後默默的點頭表示認同，並且里仁保證如果餅乾製作失敗，里仁願意全數買下。有了里仁的保證後，福義軒無後顧之憂的放心製作的胚芽餅。

但刪掉這些添加物的餅乾該如何製作呢？即便有三十多年製餅經驗的老師傅也不知道，只能先從控制烘烤時間、溫度、速度等烘焙技術下手。但是缺少添加物的餅乾仍無法克服邊緣烤焦、中間卻不熟的情況。里仁與福義軒歷經長時間無數次的試驗與改進，甚至改變製作模具的孔洞才得以做出符合期待的胚芽餅。

In 2002, Leezen approached FuYiShan, a traditional biscuit factory in Chiayi, seeking to produce biscuits with few or no additives. FuYiShan, a factory with over 50 years of history, was facing financial difficulties due to the sluggish traditional biscuit market. Leezen's arrival turned the tide.
Removing Multiple Food Additives – A Surprise for FuYiShan
To develop healthy biscuits with few or no chemical additives, Leezen asked FuYiShan to remove artificial colors, flavors, quality improvers, hydrogenated oils, ammonia powder, and baking powder from their recipes. This required considerable effort from FuYiShan's owner, Hua-Ying Tseng, to persuade the experienced biscuit makers, as these additives were essential for biscuit production and all fell within government-approved food additive regulations. Leezen noticed Mr. Zeng's concerns and explained, "Leezen pursues healthy cookies and doesn't want to add unnecessary additives for momentary cravings." Mr. Zeng nodded silently in agreement, and Leezen promised to buy all the crackers if they failed. With Leezen's assurance, FuYiShan confidently produced the wheat germ crackers without worry.
